BAKED LASAGNE

Chef Evelyn Enslow, Chef, W.S.C.A.

Ingredients

  • Meat Sauce
  • 1/3 cup oil (Veg. or Olive)
  • 2 cloves minced Garlic
  • 2 onions, diced
  • 1 green pepper, diced
  • 1 lb. ground pork or Italian Sausage
  • 1 lb. ground beef
  • Chopped parsley
  • Salt, pepper, Oregano, Sweet Basil
  • 1 large can whole tomatoes
  • 2 cans tomato paste
  • 3/4 cup Burgundy Wine
  • Ricotta Mixture
  • 2 lbs. Ricotta Cheese
  • 3 eggs
  • 1/3 cup Parmesan Cheese
  • Salt, pepper, fresh minced parsley, 2 cloves fresh, minced garlic
  • 1/2 lb. Mozzarella Cheese (cut in small pieces)
  • 1 lb. wide Lasagne noodles

Method

  1. Brown garlic, chopped parsley, onion, green pepper in hot oil. Add crumbled pork & beef, parsley, salt, pepper, oregano and sweet basil. When brown add tomatoes and paste. Fill each can that is emptied with water, add to sauce. Simmer until right consistency -- adjust seasoning to taste. Reduce The Christian Bros Burgundy Wine to one-half and add to sauce.
  2. Mix all ingredients with fork -- mixture should be seasoned well -- set aside.
  3. Prepare sauce, Ricotta cheese mixture and cut Mozzarella cheese in small pieces -- set aside.
  4. Boil lasagne noodles in rapid boiling water, add one tablespoon of oil and a good handful of salt. Drop noodles in a few at a time, stir with other hand to prevent sticking. Cook until tender -- do not over cook. Drain and run cold water over noodles to stop cooking process.
  5. When ready to assemble, spread sauce in bottom of baking dish and layer with lasagne noodles. Place a layer of ricotta mixture, mozzarella and Parmesan over noodles. Add another layer of noodles, then sauce. Arrange each layer in same manner, ending with a layer of noodles. Add sauce to top layer, sprinkle with Parmesan cheese and fresh parsley. Cover dish with foil and bake in 375° oven for about 30 minutes. Remove foil and bake until cheese in center of dish is solid. Should be served piping hot.
