Ingredients

• 1 lb. white beans - soak overnight, then drain
• 1 ham bone with meat
• 3 quarts water
• 1/2 cup mashed potatoes
• 3 onions, chopped fine
• Salt to taste
• 1 large bunch celery, chopped fine
• 1 clove garlic
• 1/4 cup chopped parsley

Method

1. Put soaked beans, ham bone, and water in soup kettle. Simmer slowly for 2 hrs. Add mashed potatoes and stir until well mixed. Add onion, celery, garlic & parsley. Simmer 1 hr. longer. Remove ham bone. Chop meat up and return meat to soup. Serves 6
