Poi Palau.

Method

  1. Sweet Potato and Coconut Poi. Since you do not have the regular taro poi available, this is an authentic and tasty substitute.
  2. Boil or steam fresh sweet potatoes (native type is just fine) add hot coconut cream (as in the luau recipe) til you have the consistancy of soft mashed potatoes. Season with salt and honey.
  3. Serve in individual bowls, since this is supposed to be eaten with two fingers. (two-finger poi)
