Huli Huli Pig.

ACHIM (KIM) DIETRICH, Chef of Mauna Kea Beach Hotel, H.S.C.A.

This pig will serve 150 guests together with the other food.

Method

  1. Huli huli means 'roll over' and is a spit-roasted pig. This method is used as an alternate to the imu (underground) way of cooking the pig.
  2. We have a motor driven spit, charcoal fire, and a 100 lb. pig takes about 8 hours under constant watch, brushing the outside with salt water during the first half of the cooking time.
  3. This pig will serve 150 guests together with the other food. Suggest for back-up some roasted pork shoulder or leg. Pieces of this can be hidden in the cavity of the whole pig and carved alongside with the meat of the pig. This way you can serve additional guests and still have some pig to show to the end.
