ZWIEBELKUCHEN (Onion Pastry)

Sue Law

Ingredients

  • 1 pkg. dry yeast
  • 1/4 c. sugar
  • pinch ginger
  • 2 1/2 Tbsp. warm water
  • 2 1/2 c. flour
  • 2 Tbsp. melted butter
  • [cut off]eggs
  • [cut off]4 tsp. salt
  • 3/4 c. milk, scalded and allowed to cool
  • 3 Tbsp. margarine
  • 2 lb. white onions, sliced thin
  • 1 Tbsp. sugar
  • 1/4 tsp. salt

Method

  1. German kuchens usually translate as cakes, but actually bear little resemblance to cakes as we know them. These pastries taste best when fresh and hot. Be sure to reheat before serving, if made in advance.
  2. In large bowl of electric mixer, place yeast, 1 [cut off]aspoon sugar, ginger and warm water, mixing well [cut off]ith spoon. Let stand until bubbly. Then turn [cut off]eaters to lowest speed and add 3/4 cup of flour. With [cut off]eaters running, add butter, beat for a moment; add [cut off]ggs, remaining sugar and salt. With beaters running, [cut off]dd 1/3 of the flour; then slowly add half of the milk. [cut off]hen well blended, add remaining flour. Continue beat-[cut off]ng until well blended. If too soft, add a little flour. [cut off]lace dough in warm place for 45 minutes. While dough [cut off]s rising, make Onion Topping.
  3. In large frying pan, melt margarine over very low heat. Add onions and cook, stirring occasionally until very limp, about 20 minutes. In small bowl, combine salt and sugar. Reserve. Grease the bottom and sides of a jellyroll pan (15 1/2 x 10 1/2 x 1 inch). Add dough, using a rubber spatula to distribute it evenly over pan bottom. Set in a warm place to rise for 45 minutes. Put onions on dough. Sprinkle with sugar-salt mixture. Sprinkle 2 more tablespoons melted margarine over Onion Topping.
  4. Place pan in preheated 350° oven for about 40 minutes or until dough begins to pull away from sides of pan and edges are crisp. Serve immediately.
  5. Takes a little time, but is really delicious.

Note from the transcription

The ingredients on this page are printed under the sub-heading "Dough:". Page ends "(Continued on Page 78)". End of a recipe begun on page 77. The left margin runs outside the frame at the top of the page, so the first two dough amounts (eggs and salt) are lost; the Onion Topping block and the lower half of the page are complete. The last four ingredients are printed under the sub-heading "Onion Topping:".
