Clarence A. "Jay" Culter
Chef, Hungerford Hotel, Seattle; Treasurer, Pacific Northwest Chefs de Cuisine Association; proprietor, Betty and Jay's Phinney Ridge Cafe & Lounge
He came up through five cities as a bellhop and pantry cook, was certified by four state associations, and ended behind his own counter baking pies. Chef of the Hungerford Hotel through the middle 1950s and twice treasurer of the Pacific Northwest Chefs Association, he survives in twenty-five photocopied pages of a book his family kept — and in not one of them a date of birth or a date of death.

Claude V. Sedenquist
Executive Chef, Ivar's Restaurants; President, Pacific Northwest Chefs de Cuisine Association, 1964–65
Executive chef of every Ivar's kitchen by thirty-four, and president of the Pacific Northwest Chefs de Cuisine Association in 1964–65. He rose through one company — assistant chef at twenty-three, head chef at twenty-five — and the dossier exists because he lent Darrell Anderson his scrapbook.
